Interval training–incorporating short bursts of speed into a workout–any workout, be it running, swimming, biking, or rowing– is hot, at least according to this piece in the LA Times. The paper reports that many trainers now believe that the key to improving one’s level of fitness is shocking yourself. Christopher Drozd, a Santa Monica strength and
conditioning coach, tells readers that "after a certain period of plodding along, doing the same steady-state
jogging and cycling, you don’t progress  your body gets used to what
you’re doing. "You have to literally shock your body off the
plateau," says Drozd. "If you push yourself to the limit [with intervals], you’re
going to get a new limit."

Interval training is the best thing I have come across as far as training in my 15 years of, well, actual training. Now I take it one step further and incorporate the ancient breathing techniques of Yoga for an incredible workout with minimal soreness afterwords. (Got it off of Mind and Body Workout.)
