Butter or Margarine, Which Is Worse?

Geezer remembers when butter was bad for you and margarine was good for you. Years later, in what seemed a scientific inevitability, it was revealed that margarine was bad for you and butter was also bad for you. In fact, almost everything was bad for you. It still is, but it’s also interesting to try to figure which of the abundant evils is most bad for you. In this piece in the New York Times, Geezer’s favorite health writer takes on the butter vs margarine controversy, which reduces nicely to saturated fats vs trans fats controversy. Jane Brody explains that gram for gram, trans fats, found in margarine, are more
hazardous to the heart than the saturated fats that are found in butter. That’s because, like saturated fats, they raise the “bad,” or L.D.L., cholesterol
that can become glued to arteries; but unlike saturated fats, they also
lower the “good” H.D.L. cholesterol that clears away these harmful
deposits. Brody reminds us that butter is not a heart-healthy choice because its saturated fat far
outweighs the trans fat in traditional stick margarines. Also, butter
contains cholesterol, which can raise blood levels of cholesterol in
some people; margarine, which is made from vegetable sources, does not.
So what’s the answer of the butter vs margarine wars? Brody never quite gets around to that, but she does give us a balanced condemnation of fats of two kinds: trans and saturated. Read more in the New York Times.
