Tofu Builds Strong Bones, And More

No got milk?  Try tofu. A new study suggests that soy protein can help prevent broken bones in post-menopausal women. The Boston Globe reports that the Shanghai Women’s Health Study, which followed 24,000 women aged 40 to 70 for four and a half years, revealed that within 10 years of menopause, high soy consumption was associated with a 50 percent reduction in  bone fracture. The story quotes Dr. Xiao-Ou Shu, a co-author of a paper about the study and a professor in the
department of medicine at Vanderbilt, saying that the consumption level of
women who were in the top 20 percent in our study equaled two
cups of soy milk per day, or three-quarters of a piece of tofu."  Wait, there’s more: tofu is also good for your heart.  Dr. Xiao-Ou Shu reminds us that the American
Heart Association recently
recommended the consumption of 25 grams of soy protein each day as a
